The least processed of all coconut sweeteners. The boiled down coconut sap has been used for thousands of years as a tropical sweetener. Out of the three coconut blossom sweeteners (coconut nectar, coconut sugar and coconut syrup-dark & light) coconut nectar is the least refined. The coconut syrup is produced from the coconut sugar (dry base) to reach higher brix concentration. The coconut nectar is coconut sap at the minimum level of brix required to have a 2 year shelf life in a glass jar.
The naturally sweet, mild flavour of our Nectar is an ideal sweetener for use on pancakes, over cereal, in tea, smoothies and all your favourite dessert recipes! (Our delicious Coconut Nectar does not have a coconut flavour)
The low Glycemic Index of coconut blossom nectar makes it an easy to metabolize sweetener friendly to people of all ages.
The farmers have to climb the trees two times a day to harvest the tapped sap. The farmers nail wooden steps to the side of the tree so that it is easier to climb. Then the coconut tree is tapped, it produces a naturally sweet, nutrient-rich “sap” that exudes from the coconut blossoms. This sap is very low glycemic and contains 17 amino acids, minerals, vitamin C, broad-spectrum B vitamins, and has a nearly neutral pH. Small batches ensure that our pure, low glycemic Nectar, made from this natural sap, is a raw, enzymatically alive product, minimally evaporated at low temperatures (only to remove excess moisture and allow sap to thicken), never exceeding an average summer day in the tropics.
