Cacao butter is the cold-pressed oil of the cacao bean. The pods are harvested by hand and fermented to reduce their initial bitterness. The process of cold pressing the beans allows for a higher proportion of micronutrients to be retained. Raw cacao butter can be used to make raw chocolate, as well as to enhance the typical cacao flavor in desserts. It is also used in cosmetics, lotions and pharmaceuticals.
