Baking with Coconut Flour:

In baking, you cannot substitute coconut flour for wheat or other grain-based flours at a 1:1 ratio.  They are not equivalent. You generally want to substitute 1/4 cup to 1/3 cup coconut flour for 1 cup grain-based flour.

Product Story & Background

Coconut flour is a soft flour produced from dried coconut meat.  It is a natural byproduct of coconut milk production. When coconut milk is pressed from coconut meat, bits of solid coconut meat are leftover, that are then dried at a low temperature and ground until it produces a soft, fine powder which is then suitable for baking.

Unlike wheat flour, coconut flour does not fluff up and raise. Therefore, it is recommended to mix coconut flour with other flours in order to reduce the gluten content and to add fiber.

French sailors navigating the tropics desperately needed a taste of mother France when they stumbled upon coconut flour. It since then became one of the key ingredients in Macaroons. Nowadays coconut flour has been an ally for vegans, gluten intolerants and health fanatics.
