The glycemic index measures the effects of carbohydrates on your blood sugar. Coconut sugar ranks just 35 on this index, while regular table sugar ranks between 60 and 75.
Coconut Sugar offers more vitamins and minerals than white table sugar. It contains trace amounts of vitamin C, potassium, phosphorous, magnesium, calcium, zinc, iron and copper, small amounts of phytonutrients, and antioxidants. You’ll also find the B vitamin inositol, often used as a mood booster, in coconut sugar.

Coconut blossom sugar is created from the blossom of the coconut tree. New sprouts of coconut blossoms are cut and then tied together before they are pollinated and become baby coconuts. The tied blossom bundle will bleed a sap, which is harvested. The sap is heated until it becomes a caramel, which is then dried into a sugar. The sugar is filtered through meshes with different thread counts. Coconut sugar has been used as a traditional sweetener for thousands of years in the South and South-East Asian regions where the coconut palm is in abundant supply. We work together with local farmers and have dedicated quality control at the source to ensure that our coconut sugar is of organic quality without any additives.
