Special Handling

Production Process

This sweet powder comes from the Peruvian fruit, lucuma. After harvest, fruits are handpicked and transferred to processing centers. Here, they are cleaned, cut and chopped. During this process, any dark or hard areas of the fruit are removed in order to avoid any bitter taste in the final product. The chopped fruit is then dehydrated below 55 degrees Celsius for at least 8 hours. The dried lucuma is then ground and sifted, resulting in a fine powder, ready to be packaged.

Product Information

Lucuma fruit comes from a species of tree known as Pouteria lucuma. These trees are grown in Peru and parts of Chile at high altitudes, typically 2,700 to 3,000 meters above sea level. Farmers have unsuccessfully attempted to grow Pouteria lucuma outside of the Andean mountains; however, the high altitudes and harsh climate of this mountainous region provide the ideal growing conditions for lucuma fruit production. The fruit is sometimes referred to as a cross between an avocado and a mango. The meat of the fruit is bright orange in color and dry and mealy in texture.

In Peru, lucuma is most commonly used to flavor milkshakes, ice creams and other desserts. In fact, it’s rated as the most popular ice cream flavor in Peru! It pairs well with chocolate and caramel but can also be eaten on its own. Lucuma powder is the most common byproduct of the fruit because it travels well but also preserves the natural sweetness and flavor of the fruit.
