Organic Raw cacao powder is obtained by cold-pressing roasted cocoa beans and then grinding these into a fine powder. This process removes nearly all the fat from the cocoa bean, leaving a strong, rich and bitter flavour. Cacao is a great source of antioxidants such as procyanidins and flavonoids.

Alkalised cacao powder, often referred to as “Dutch-process” or “Dutched” cacao powder, differs from raw, or natural, cacao powder due to the production process. In alkalised cacao powder, the cocoa beans are washed in an alkaline solution of potassium carbonate. This process neutralizes the acidity in the beans which, in turn, makes the powder neutral. Because of the neutrality in alkalised cacao powder, it does not react with baking soda. The alkalising process also makes cacao darker in color, mellow in flavor, and easily dissolvable.
